  • 2.25 cupsall purpose flour(sifted)
  • 0.5 cupunsweetened cocoa powder
  • 1 tspbaking soda
  • 1 tspsalt
  • 1.75 cupssugar
  • 0.5 cupunsalted butter(room temperature)
  • 0.5 cupvegetable oil
  • 2 largeeggs
  • 1 tspvanilla extract
  • 0.5 cupbuttermilk
  • 2 cupszucchini(grated unpeeled)
  • 1 cupsemisweet chocolate chips
  • 0.75 cupwalnuts(chopped)

Preparation

  1. 1Preheat oven to 325°F. Butter and flour 13 x 9 x 2-inch baking pan.
  2. 2Sift flour, cocoa powder, baking soda and salt into medium bowl.
  3. 3Beat sugar, butter and oil in large bowl until well blended.
  4. 4Add eggs 1 at a time, beating well after each addition.
  5. 5Beat in vanilla extract.
  6. 6Mix in dry ingredients alternately with buttermilk in 3 additions each.
  7. 7Mix in grated zucchini.
  8. 8Pour batter into prepared pan.
  9. 9Sprinkle chocolate chips and nuts over.
  10. 10Bake cake until tester inserted into center comes out clean, about 50 minutes.
  11. 11Cool cake completely in pan.
