- 2 mediumbananas(peeled and thinly sliced)
- 0.5 cupextra virgin olive oil
- 1 cupgranulated sugar
- 2eggs
- 1 tspvanilla extract
- 0.5 cupsour cream(regular or light)
- 1.5 cupsall purpose flour
- 1 tspbaking soda
- 0.25 tspsalt
- 0.5 cupsemi sweet chocolate chips or nuts(optional)
Instructions
- 1Preheat oven to 350°F. Slice two medium bananas thinly.
- 2In a large bowl add oil, sugar, eggs and mix well.
- 3Add vanilla and mix. Then add sour cream and mix until combined.
- 4Add sliced bananas, flour, baking soda, salt and chocolate chips. Mix just until flour is incorporated.
- 5Pour into a 9"x5" loaf pan. Bake for approximately 45-55 minutes, just until tester comes out clean. Enjoy!
