- 4boneless skinless chicken thighs
- 1lemon(juice and zest)
- 4 clovesgarlic(finely chopped)

- 2 TbspItalian seasoning

- 2Persian cucumbers(diced)
- 0.13 cupfresh dill(chopped)
- 0.13 cupfresh parsley(chopped)
- 2 ozfeta cheese(crumbled)
- 1lemon(zest only)
- 2lemons(juice only)
- 0.33 cupolive oil
- 1.5 tspDijon mustard
- 1 TbspItalian seasoning
- 3 clovesgarlic(finely grated)
- 1 Tbsphoney
Instructions
- 1Marinate chicken with lemon juice and zest, garlic, olive oil, Italian seasoning, salt and pepper.
- 2Cook chicken on a cast iron skillet over medium heat until fully cooked.
- 3Chop chicken into bite sized pieces.
- 4Dice shallot and Persian cucumbers.
- 5Chop fresh dill and parsley.
- 6Halve kalamata olives and crumble feta.
- 7For dressing, add lemon zest, lemon juice, olive oil, Dijon mustard, Italian seasoning, grated garlic, honey, salt and pepper to a jar.
- 8Seal jar and shake until fully emulsified.
- 9Combine all salad ingredients in a bowl.
- 10Pour dressing over salad, toss, and adjust seasoning as needed.
