  • 4chicken thighs
  • 0.5white onion(diced)
  • 1shallot(diced)
  • 1 clovegarlic(minced)
  • 2 Tbsptarragon(chopped)
  • 1 Tbspfresh thyme leaves
  • 1 Tbsptomato paste
  • 200 mlred wine vinegar
  • 400 mlwhite burgundy wine
  • 400 mlchicken stock
  • 400 mlheavy cream
  • salt(to taste)
  • pepper(to taste)
  • neutral oil

Instructions

  1. 1Begin by prepping the vegetables
  2. 2In a heavy bottom pan sear the chicken on both sides in neutral oil until nicely browned, remove from the pan
  3. 3Add onion, shallot, garlic to the pan and cook over medium heat until sweat down and lightly browned all over
  4. 4Add tomato paste and continue to cook for 2 minutes incorporating completely
  5. 5Turn heat to high and add vinegar. Cook until boiling and reduce to almost syrupy consistency
  6. 6Add wine and boil for 2 minutes. Add stock and herb and bring to a boil
  7. 7Once boiling reduce to simmer, add chicken pieces and cover. Cook 15-20 minutes
  8. 8Remove lid and remove chicken pieces
  9. 9Add cream and bring to the boil. Cook until reduced by 50%
  10. 10Add chicken back to the pot and cover for 1 minute to reheat chicken
  11. 11Serve with plenty of sauce and more chopped tarragon
