- 2chicken thighs(large, skin-on, bone-in)
- 2 gsalt(1/2 tsp)
- 5 goil(1tsp)
- 40 gsoy sauce(4 Tbsp)
- 40 gsake(4 Tbsp)
- 40 gaji mirin(4 Tbsp)
- 30 gsugar(1/4 cup)
- 1 cupmedium-grain rice
- 1 tspsesame seeds(for garnish)
Instructions
- 1Remove bones from chicken thighs by making slices on either side of the bone, then sliding knife along the bone to expose it. Cut out the bone and remove any cartilage.
- 2Score the flesh side of the thighs with half-inch deep cuts every 1-1.5 inches, making about 5 slices diagonally one way and 5 the other way.
- 3Season flesh side only with salt.
- 4Dry the skin side with paper towels.
- 5Heat a non-stick pan over medium-low heat (4 out of 10). Add a little oil.
- 6Place thighs skin-side down and press with a heavy saucepan for the first minute.
- 7Cook for 5-6 minutes, rotating pan every 90 seconds for even heating.
- 8Remove the pressing pot and continue cooking for another 4-5 minutes until skin is deeply browned and crispy.
- 9Flip thighs and cook on flesh side for 2 minutes over low heat (2 out of 10) until internal temperature reaches 170°F.
- 10Rest chicken for 5 minutes on a wire rack.
- 11For sauce: wipe excess fat from pan, leaving brown bits. Add soy sauce, sake, mirin, and sugar. Simmer over high heat for 5 minutes until thick and glossy.
- 12Brush sauce onto rested chicken.
- 13Slice skin-side down into 5-7 pieces and serve over rice with sesame seeds.
