  • 1 canskipjack tuna(olive oil-packed or water-packed, drained)
  • 2 Tbspkewpie mayo
  • 3 Tbspolive oil
  • 1 Tbsppickle relish
  • 1hard-boiled egg(chopped)
  • 1 Tbspparsley(chopped)
  • 1 Tbspchives(chopped)
  • 2 tsplemon juice
  • 2 Tbspcelery(cut into thin strips)
  • 2 Tbspred onion(chopped)
  • 1 pinchsalt
  • 1 pinchblack pepper
  • 4 slicesshokupan bread(Or standard white bread)
  • 2 Tbspkewpie mayo(for spreading on bread)
  • 2leaves butter lettuce(Or lettuce of your choice)
  • 1 cuppotato chips(divided for mixing and topping)

Instructions

  1. 1Drain the tuna and place in a bowl
  2. 2Add mayonnaise and olive oil to the tuna
  3. 3Add pickle relish
  4. 4Chop the hard-boiled egg and add to the mixture
  5. 5Add chopped parsley and chives
  6. 6Squeeze in lemon juice
  7. 7Cut celery into long thin strips, line them up and cut across them, then add to mixture
  8. 8Add chopped red onion
  9. 9Season with salt and black pepper
  10. 10Taste and adjust seasoning for salt, pepper, and acidity
  11. 11Crush some potato chips and mix into tuna salad
  12. 12Spread mayonnaise on each slice of bread
  13. 13Add butter lettuce to sandwiches
  14. 14Pile tuna salad mixture on bread
  15. 15Top with more whole potato chips
  16. 16Close sandwiches and press down gently
  17. 17Cut into triangles and serve immediately
