Instructions
- 1Divide ground beef into 4 even portions and knead each ball until it feels tacky and holds together well.
- 2Flatten patties into 3-inch rounds and season one side with salt and pepper.
- 3Slice onions as thin as possible using a mandoline or knife just before cooking.
- 4Place a large pile of sliced onions on top of each unseasoned side of the patties.
- 5Heat cast iron pan or stainless steel pan on highest heat with no oil.
- 6Place patties seasoned-side down in pan one at a time and smash down with large spatula, focusing on making edges thin while keeping centers slightly thicker.
- 7Season the onions with salt and pepper after smashing.
- 8Cook until first side develops a crusty edge, then flip patties with onions.
- 9Add American cheese slices on top of patties.
- 10Place top buns on the cheese, then bottom buns on top.
- 11Cover with a towel, tucking edges to prevent burning, and steam for a couple minutes.
- 12Remove towel and assemble burgers by placing bottom bun under each patty stack.
