- 4boneless, skinless chicken breasts
- 0.25 cupchicken stock
- 2 tbsplime juice(1 lime)
- 2 clovesgarlic, minced
- 1 tspcumin
- 0.5 tspground coriander
- 0.25 tsppepper
- 4flour tortillas
- 2 tbspvegetable oil
- 1onion, thinly sliced
- 1red pepper, cut in thin slices
- 1hot banana pepper, cut in thin slices
Instructions
- 1Slice chicken crosswise into 1/2-inch wide strips. In bowl, combine stock, lime juice, garlic, cumin, coriander and pepper. Add chicken and stir to coat; set aside.
- 2Wrap tortillas in foil and warm in 350F oven for 10 minutes.
- 3Meanwhile, in skillet, heat 1 tbsp of the oil over high heat. Drain chicken, reserving marinade. Pat chicken dry and add to skillet; stir-fry for 5 minutes or until no longer pink inside. Remove and set aside in serving bowl.
- 4Add remaining oil to skillet; stir-fry onion and red and banana peppers for 1 minute. Pour in reserved marinade; cook, stirring, for 30 seconds or until most of the liquid has evaporated.
- 5Spoon salsa, grated cheddar cheese, sour cream or guacamole, chicken and peppers over warm tortilla and fold up.
