🍽️Leek Frittata
by Your (@Ben Silver)
Frittata is a great way to use up leftover veggies and cheese. So feel free to varry from this recipe by replacing the asparagus with another non-alium veggie like sweet peppers, and the leek with another allium like onion. Feel free to leave out the kale as well, or replce it with spinach. I also tend to use a whole leek and then skip the green onion. Green onion can also be replaced with any other kind of scalion or chives. Also, feel free to use up any cheese you have left over, with the exception of really strong ones like blue cheese.

- 1 Tbspbutter
- 7asparagus(rough chopped to about 1-2cm)
- 0.5Leek(Chopped in half, cleaned, then chopped into onion like curves)
- 1 pinchsalt
- 4kale leaves(Stem removed and rough chopped)
- 1 smallhandful of chopped green onion
- 150 gcheese(I tend to use a mix of cheddar and parm)
- 1spoonfull of greek yogurt
- 6eggs
- 2 pinchessalt
- black pepper to taste
- 1 Tbspbutter
Instructions
- 1Prep all veggies (Or if you are fast do it between the following steps.)
- 2Melt butter over medium-high heat in a pan that doesn't stick, and can go in the oven. (Teflon, newer ceramics glazed, or well seasoned carbon steel are good options here, but anything works, you will just be scraping the end product off afterwards.)
- 3Add asparagus, leeks, and salt, stir and cook for about 2 minutes.
- 4Add kale, then stir and cook for about 2 minutes.
- 5Add green onions.
- 6While that cooks, add your cheese, yogurt, eggs, salt, and pepper to a medium bowl.
- 7Wisk until combined and uniform looking.
- 8Dump your pan contents into the bowl
- 9Whipe the pan with paper towel, and clean any bits off in your sink if needed. Rinse and return to the stovetop. This is to maintain non-stick properties while cooking.
- 10melt butter in the pan, ensure even coating, then add the mixture back in.
- 11Stir in a light folding motion just until there are chunks of partly cooked eggs all the way through, but the center is still pretty liquidy, about 30 seconds.
- 12Smooth it out then transfer it to the middle oven rack with the broiler on high for 4-5 minutes. It should now be browned on top but still soft in the middle.
- 13Serve out of pan, or loosen then flip onto plate.
