- 1Use the central sections of celery stalks, keeping them the same size.
- 2Place your knife underneath the seeds and pull towards you to remove fibrous strings in thick strands.
Braising
- 1Place celery in a pan with chicken stock, olive oil, and a squeeze of lemon.
- 2Cover with cartouche and cook until tender.
Béchamel Sauce
- 1Let butter foam and turn slightly nutty.
- 2Add equal parts flour to butter to make a roux.
- 3Gradually add milk and cook until thick.
- 4Take off heat and stir through cheese.
Assembly & Serving
- 1Pipe béchamel into the center of the celery.
- 2Add a layer of cheese on top and grill for caramelization.
