Street Corn Salsa

  • 2 cupscorn
  • 0.25 cuplight mayonnaise
  • 0.25 cupcotija cheese
  • 1lime(juice and zest)
  • 1jalapeño(finely diced)
  • 3 Tbspcilantro(chopped)
  • 1 tspTajin(optional)

Instructions

Chicken

  1. 1Cube the chicken breast and season with salt, pepper, garlic powder, chili powder, paprika, and cumin.
  2. 2Marinate with olive oil.
  3. 3Spray with avocado oil and cook until done.

Street Corn Salsa

  1. 1Combine corn, light mayonnaise, cotija cheese, lime juice and zest, diced jalapeño, chopped cilantro, cubed avocado, and Tajin if using.
