  • 1 largeegg, beaten
  • 0.5 cup(125 mL) all-purpose flour
  • 0.33 cup(75 mL) pineapple juice
  • 0.5 tsp(2 mL) salt
  • Peanut oil or vegetable oil, for frying
  • 1 smallpork tenderloin (¾ to 1 lb/340 to 450 g), cut in large cubes
  • 1 cup(250 mL) pineapple juice
  • 0.25 cup(60 mL) brown sugar
  • 0.25 cup(60 mL) white vinegar
  • 0.25 cup(60 mL) tomato purée(passata)
  • 2 tbsp(30 mL) cornstarch
  • 1 tbsp(15 mL) molasses
  • 1 tbsp(15 mL) peanut oil
  • 1 smallonion, cubed
  • 0.5sweet red pepper, cubed
  • 0.5sweet green pepper, cubed
  • 1.5 cups(375 mL) fresh pineapple cubes
  • 1to 2 tbsp (15 to 30 mL) sesame seeds, for garnish
  • 3green onions, chopped, for garnish

Instructions

  1. 1To make the coating for the pineapple pork: Combine egg, flour, pineapple juice and salt in a bowl. Whisk to blend. Set aside.
  2. 2Pour enough oil into a deep saucepan or wok to come about 1½ inches (4 cm) up the sides of the pan. Heat oil to 350°F (180°C) over medium heat.
  3. 3Toss pork in coating. Working in batches to avoid crowding the pan if needed, add pork to hot oil. Fry pork, turning once, until coating is golden and meat is just cooked through, about 3 minutes. Drain on paper towels. Drain wok, if using.
  4. 4To make the sweet-and-sour sauce: In a medium bowl, combine pineapple juice, brown sugar, vinegar, tomato purée, cornstarch and molasses. Whisk to blend.
  5. 5Heat 1 tbsp (15 mL) peanut oil in wok or a large skillet over medium-high heat. When oil is hot, add onions, red and green peppers and pineapple cubes; stir-fry for 2 to 3 minutes. Add sweet-and-sour sauce. Bring to a boil and cook until sauce starts to thicken, 1 to 2 minutes. Add pork and stir-fry until meat is heated through.
  6. 6Serve garnished with sesame seeds and green onions. Serve over steamed rice.
