- 8 ozElbow Macaroni(Uncooked)
- 2 TbspSalted Butter
- 2 TbspAll Purpose Flour
- 0.48 tspSea Salt
- 0.24 tspGarlic Powder(Optional but recommended)
- 1.04 cupWhole Milk
- 0.24 cupSour Cream(Or Greek Yogurt)
- 2 cupShredded Cheddar(Shredded)
Instructions
- 1Cook elbow macaroni according to package instructions. Add ¼ tsp salt to the boiling water. Drain and set aside.
- 2Mix flour, sea salt, and garlic powder together in a small bowl. Set aside.
- 3In a medium saucepan over medium heat, melt the butter.
- 4Add flour mixture and whisk to combine. Cook for 1 minute until mixture is slightly brown.
- 5Add 1 cup milk and whisk until the mixture is smooth.
- 6Add sour cream (or Greek yogurt) and whisk until smooth.
- 7Cook on medium-high heat until thickened (about 3-5 minutes). Do not let it boil.
- 8Once thick (sticks to the back of a spatula), reduce heat to low and add cheese.
- 9Whisk until cheese is melted and mixture is smooth.
- 10Taste and add more salt/seasoning if desired.
- 11Add cooked macaroni and stir until evenly coated.
