- 2 lbChicken Wing((Ideally a Package That Says Air Chilled Wings))
- 2 tspKosher Salt
- 2 tspCorn Starch
- 2 tspBaking Powder
- 2 TbspCanola Oil
- 2 StalkCelery
Buffalo Sauce
- 4 TbspButter
- 3 ClovesGarlic(Minced)
- 4 TbspFranks RedHot(Or another vinegary hot sacue likes daves or crystal)
- 1 tspketchup((Measure with your heart))
Instructions
Wings
- 1Dry wings with paper towel, then transfer to a large bowl.
- 2Season with salt, corn starch, and baking powder. Toss to coat.
- 3Spread wings on a baking sheet, with a wire rack on it, then leave in the fridge uncovered overnight.
- 4Preheat oven to 450C on convection.
- 5Transfer wings to a bowl, and toss with oil.
- 6Put wings back onto baking sheet with wire rack, ensureing to pull any skin over exposed meat. (Leave room between them for crispage)
- 7Put in oven for 20 minutes, flip, then back in for another 20 minutes or until golden brown and crispy.
- 8Put in a bowl and toss with sauce.
- 9Serve with celary.
Buffalo Sauce
- 1Melt butter in sauce pan on low heat and add garlic while it is melting
- 2Add hot sauce and ketchup once butter is melted.
- 3Mix, and then turn off heat, or keep low until wings are ready.
