  • 0.75 cupsgranulated sugar
  • 2 Tbspcornstarch
  • 1 tspcinnamon
  • salt(pinch)
  • nutmeg(pinch)
  • 2 Tbspunsalted butter(softened)

Filling

  1. 1Peel and core apples; cut into 1/4-inch thick slices and place in large bowl.
  2. 2Toss together sugar, cornstarch, cinnamon, salt and nutmeg; toss with apples to coat.

Assembly

  1. 1On lightly floured surface, roll out half of the pastry to generous 1/8-inch thickness; fit into 9-inch pie plate.
  2. 2Trim to leave 3/4-inch overhang.
  3. 3Scrape filling into pie shell, packing down firmly; dot with butter.
  4. 4Roll out remaining pastry.
  5. 5Whisk egg yolk with 2 tsp water; brush some over pastry rim in pie plate.
  6. 6Fit pastry over filling; trim to leave 3/4-inch overhang.
  7. 7Fold overhang under bottom pastry rim; seal and flute edge.
  8. 8Brush top with remaining egg wash; sprinkle with sugar.
  9. 9Cut steam vents in top.

Baking

  1. 1Bake on bottom rack of 425°F oven for 20 minutes.
  2. 2Reduce heat to 350°F; bake until bottom is golden and filling is bubbly, 60 to 65 minutes.
