- 0.67 cupvegetable oil
- 1 cupgranulated sugar
- 1egg
- 0.25 cupmolasses
- 2 cupsall-purpose flour or whole wheat flour
- 2 tspground ginger
- 1 tspground cinnamon
- 1 tspbaking powder
- 1 tspbaking soda
- 0.25 tspkosher salt
- 0.5 cupcoarse sugar(for rolling)
Instructions
- 1With an electric mixer or in a food processor, combine oil and granulated sugar. Beat in egg and molasses.
- 2In a separate bowl, combine flour, ginger, cinnamon, baking powder, baking soda and salt. Stir into egg mixture. Refrigerate dough for 1 hour.
- 3Shape dough into balls (1 tbsp / 15 mL each). Roll in coarse sugar. Place on parchment-lined baking sheets with lots of room between cookies. Press down lightly.
- 4Bake in a preheated 350°F (180°C) oven for 9 to 11 minutes, or until cookies are crackly but still chewy. Cool on racks.
